Vegan Snacks: Sweet Tooth Edition


I have a huge sweet tooth. I can’t even recall a time where I didn’t end the day with dessert. It’s my thing. However, my fitness goals (aka abs of steel) don’t really allow me to indulge on the daily. So, it has become my mission to create healthy, vegan, and gluten free sweets that align perfectly with my goals. So if you’re in the same boat as I am, and find yourself dreaming of cake and cookies- Don’t fret because I have everything you need in this post. There is a recipe for everyone! This recipe is by the wonderful @cleaneatsbytay give her a follow and check out her blog she’s cool and full of wonderful recipes.


  • 1 1/2 cups dried figs (just a few short of a whole container at Trader Joe’s!)
  • Juice from 1/2 lemon
  • 1/4 cup nut milk
  • 1/2 tsp cinnamon


  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 2 tbsp flax meal
  • 1 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1/8 tsp sea salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup unsweetened applesauce
  1. Pre-heat oven to 350
  2. mix the filling ingredients in a food processor until it becomes a paste (set aside)
  3. combine the crust ingredients into a large mixing bowl. mix the ingredients with a large spoon.
  4. line a baking pan (I used a loaf pan) with parchment paper
  5. apply half of the crust mixture in the lined pan. press down and spread evenly.
  6. add all of the filling on top of first layer
  7. add the remaining crust mixture and be sure to spread evenly
  8. place in the oven for 30 min
  9. cut into small pieces and serve (can be stored in fridge)

Recipe 2: Chocolate Peanut Butter Cookies (Yes, you read this right)

  • 3/4 cup dates (5-7 pitted dates)
  • 1/2 cup peanut butter
  • 1 cup oats
  • 3 tbs cacao powder
  • dash of cinnamon
  • 1 tsp of vanilla extract
  1. combine all of the ingredients in a food processor
  2. roll the mix into balls and either leave them as balls or press into cookies
  3. you can top with nibs, dip them into chocolate, or just leave them plain

Recipe 3: Deconstructed Apple Pie

  • 1 fuji apple
  • cinnamon
  • vanilla extract
  • dash of water
  • Optional Toppings: I used rawnola and plain cashew yogurt
  1. cut your apple into slices
  2. heat frying pan on medium heat
  3. add a dash of water to the pan and put the slices in
  4. add the cinnamon and vanilla extract and cook until soft and brown
  5. top with toppings or just leave plain
